Hummus
Ingredients
2-3 medium garlic cloves, minced
large handful of parsley
2 scallions, 1" pieces
3 cups chick peas, well drained (2 15.5 oz cans)
6 tablespoons tahini
6 tablespoons lemon juice
3/4 - 1 teaspoon salt to taste
pinch of cayenne
pinch of cumin
Method
Mince garlic, parsley, & scallions.
Add chick peas, tahini, lemon juice, and salt. Puree to a thick paste.
Season to taste with cayenne, cumin, & salt.
Chill in a tightly lidded container.
